Simple Summer Cole Slaw Recipe

Our cole slaw recipe will remind you of a traditional New England style coleslaw, just like the kind of slaw you get at a fried clam shack! It's simple, easy to make and goes perfect with any Summer BBQ menu. It also pairs well with ribs too! Perfect recipe for gardeners to put their harvest to good use. This recipe makes at least 10 good sized servings. For a larger crowd, double up on the recipe!

You will need:
1 Head of fresh cabbage, Shredded
1 1/2 Cups of shredded carrots
1/4 Cup minced onion (optional)
1 C Mayonnaise
1/2 Cup Vinegar (White or Cider)
1/4 Cup Sugar (Add more if you want it to be sweeter)
Salt & Pepper to Taste

In a medium bowl, whisk the vinegar and sugar. Add in the Mayonnaise and whisk to make the "dressing".

In a large bowl, toss the cabbage, carrots & onion.
Pour the dressing over the cabbage mixture slowly while mixing to achieve the desired consistency.
Add the salt & pepper to taste.
