Auntie Cathy’s Tomato & Bread Salad Recipe
Many of our customers grow tomatoes and wonder what to do with an over-abundance. Beside making sauces
and delighting your neighbors with tomatoes, my aunt’s Tomato and Bread Salad is always a huge hit at family gatherings and goes quickly, so don’t be afraid to double the recipe. Enjoy!

Recipe for Tomato & Bread Salad


1 Loaf of fresh Italian bread; cubed and toasted in the oven for 20 minutes at 350 until lightly browned
2-3 Cups of tomatoes (Cut into bite size chunks or use cherry or grape tomatoes)– use more if you have a bountiful harvest
½ Cup fresh basil, chopped
½ Cup onion sliced thin
½ Cup Extra Virgin Olive Oil (EVOO)
2 Tablespoons of red wine vinegar
(You can substitute Italian Dressing for
the EVOO and Vinegar)
½ TSP salt
½ TSP pepper
1 Minced clove of garlic
Your choice of cheese (feta, blue, goat, or shaved parmesan) to taste

In a large bowl combine the toasted bread, tomatoes, basil & onion.

In a small bowl, whisk the remaining ingredients, except the cheese.

Drizzle the dressing over the bread and tomatoes, toss and let stand for 20 minutes.

Just before serving add the cheese.
